Grilled Lime Spiced Corn on the Cob

Ingredients

  • 4 cobs of corn
  • 1 tbsp (15 mL) vegetable oil
  • 1/2 tsp (2 mL) chili powder
  • 1/2 tsp (2 mL) cumin
  • 1/2 tsp (2 mL) salt
  • 1 pinch cayenne pepper
  • 1/2 lime

Directions

  1. Choose corn with bright green husks, light damp stalk end and moist skin. Pull husks off corn, rub off silk.
  2. In a small bowl combine chili powder, cumin, salt, and cayenne pepper. Set aside.
  3. Brush corn with vegetable oil. Place on greased grill over medium-high heat. Close lid and grill for 10-15 minutes, turning frequently, until lightly grill marked.
  4. Remove corn from the grill. Rub corn with lime half and sprinkle with spice mixture.
