Grilled Vegetable Salad

Ingredients

  • 1 Red pepper, cut into quarters
  • 1 Orange pepper, cut into quarters
  • 1 Green pepper, cut into quarters
  • 1 Vidalia onion or red onion, cut into 6 slices
  • 8 Mushrooms, halved
  • 1 tbsp (5 mL) Western Family extra virgin olive oil
  • 2 tbsp (30 mL) Western Family balsamic vinegar
  • 2 tsp (10 mL) Western Family extra virgin olive oil
  • 1 tsp (5 mL) grainy mustard
  • 1 tsp (5 mL) Western Family liquid honey
  • 1 small garlic clove, minced

Directions

Preheat the barbecue or broiler to medium-light heat.

In a large bowl, toss the vegetables with 1 tsp of olive oil.

Place the vegetables on a baking sheet to broil directly on the barbecue. Grill or broil until sightly blackened.

Whisk dressing ingredients together. Toss in the vegetables. Serve at room temperature.
