Haagen Dazs Rum Caramel Blondie Ice Cream Sandwiches with Blackberries

Ingredients

  • 2 cups (500 mL) fresh blackberries
  • 2 cups (500 mL) Haagen Dazs Rum Caramel Blondie Ice Cream, softened
  • 12 large digestive biscuits

Directions

1. Fold blackberries into ice cream. Freeze for 4 hours or overnight
2. Working quickly, place 6 biscuits on a baking paper-lined tray; place a scoop of ice-cream on top of each biscuit, then top with remaining 6 biscuits.
3. Press down gently. Freeze.
4. Pull from freezer 20 minutes before serving.

Hint: You can use any berries your choice.
