Irish Cream Biscotti Ice Cream Truffles

Ingredients

  • 2 cups (500 mL) Haagen Dazs Irish Cream Biscotti Ice Cream, slightly softened
  • 1 cup (250 mL) fresh raspberries
  • 3 100 g Western Family Swiss Dark Chocolate Bar, chopped

Directions

1. Line 2 small baking sheets with parchment paper or foil. Freeze for 10 minutes.
2. Fold raspberries into ice cream. Freeze for 4 hours or overnight.
3. Using a melon baller, scoop the ice cream to form 1-inch balls and place on sheet.
4. Return sheet to freezer. Repeat this process with second sheet. Freeze the balls for 30 minutes or until solid.
5. Melt the chocolate in a bowl in a microwave or in the top of a double boiler. Dip the chilled balls, one at a time, into the melted chocolate. Remove with a fork, letting the excess chocolate drip back into the bowl. Freeze for 1 hour before serving.
Hint: you can use white chocolate as well.
