1) Veggie Burrito Bowl
Ingredients
- 1 serving instant rice
- 1/2c black beans
- 1/4c chopped red pepper
- 1/4c shredded cheese
- ¼ avocado (chopped)
- 2tbsp cilantro
Directions
- Add instant rice to the bottom of your mug.
- Top with black beans, red peppers, cheese, avocado and cilantro.
- Add hot sauce and extra cheese if desired and enjoy!
2) Tortilla Egg Cup
Ingredients
- 1 large tortilla
- 2 eggs
- 2 tbsp red peppers
- 2 tbsp shredded cheese (+ extra for garnish)
- 2 tbsp cilantro (+ extra for garnish)
Directions
- Place tortilla in your mug.
- Crack in two eggs, then add in chopped veggies and shredded cheese.
- Microwave at 20 sec increments until egg has set and enjoy!
3) Veggie Mug Omelette
Ingredients
- Cooking spray
- 2 eggs
- 1/4c chopped red pepper
- 2 tbsp cilantro
- Salt and pepper
- 1/4avocado, sliced (for topping)

Directions
- Spray your mug with cooking spray and then crack two eggs inside.
- Whisk eggs and then add in veggies of choice.
