Oven Roasted Chicken Fajitas

Ingredients

  • 3 Maple Leaf Boneless Skinless Chicken breasts, cut into strips
  • 1 can (19 oz) diced tomatoes
  • 1 can (127 mL) green chilies
  • 1 onion, thinly sliced
  • 1 red pepper, sliced
  • 3 tbsp (45 mL) vegetable oil
  • 2 tsp (10 mL) chili powder
  • 2 tsp (10 mL) cumin
  • 1 tsp (5 mL) garlic powder
  • 1/2 tsp (2 mL) dried oregano
  • salt & pepper
  • 12 Western Family Original Tortillas, warmed
  • salsa
  • sour cream

Directions

  1. PREHEAT oven to 400°F (200°C).
  2. LIGHTLY grease a 9×13” (3.5 L) baking dish. Mix together tomatoes, chillies, onion and pepper. Whisk
    oil and spices in a separate bowl. Drizzle over chicken pieces and vegetables. Spread this mixture
    evenly over the bottom of the baking dish and roast, uncovered for 20-25 minutes or until the internal
    temperature of the chicken reaches 165°F (74°C).
  3. SPOON the mixture on top of warm tortillas, roll up and serve with salsa and sour cream.
