Prawn Naanwich

Ingredients

  • 1/2 cup (125 mL) mayonnaise
  • 1 tsp (5 mL) sesame oil
  • 1/4 cup (60 mL) cilantro, chopped
  • 2 green onions, finely chopped
  • 1/2 tbsp (7 mL) ginger, minced
  • 1 clove garlic, minced
  • 2 tbsp (30 mL) sweet chili sauce
  • 16 Western Family Prawns, shelled and placed, 4 per skewer
  • 2 tbsp (30 mL) olive oil, divided
  • 1/2 cucumber, sliced
  • 1/2 head butter lettuce, washed, leaves separated
  • 4 naan bread

Directions

1) Preheat a BBQ or a grill pan to medium/high heat.
2) In a small bowl, whisk together mayonnaise, sesame oil, cilantro, green onions, ginger, garlic and sweet chili sauce.
3) Brush prawns with 1 tbsp olive oil and season with salt.  Grill skewered prawns until just cooked through (about 2 minutes per side).
4) Brush naan with remaining olive oil and lightly grill the bread.
5) Cut all the naan in half and top 4 pieces with chili mayo, butter lettuce leaf and sliced cucumbers.  Slide the prawns off the skewers and place on top.  Top with remaining naan bread and enjoy.
Tip: Substitute scallops for the prawns.
