Roasted Yam and Black Bean Burritos

Ingredients

  • 1 large yam, peeled and cubed
  • 3 tbsp (45 mL) canola oil, divided
  • 1 yellow onion, diced
  • 1 - 1/2 tsp (8 mL) ground cumin
  • 1/2 tsp (3 mL) Mexican chili powder
  • 2 clove garlic, minced
  • 1 cup (250 mL) Western Family peaches and cream frozen corn
  • 1 - 540 mL can Western Family black beans, drained
  • 2 tsp (10 mL) kosher salt
  • 4 Casa Mendosa Ancient Grains Tortillas
  • 4 foil packages of Laughing Cow Original cheese, unwrapped
  • 1/4 cup (60 mL) fresh cilantro

Directions

1) Preheat oven to 400°F (200°C). Toss cubed yams with 1 tbsp of the canola and place on a baking sheet. Bake for 20 minutes.
2) Meanwhile, combine onion and remaining canola oil in large nonstick skillet. Cook over medium-high heat until onion is golden, about 6 minutes. Add cumin and chili powder; stir 20 seconds. Add garlic, corn and black beans; sauté 10 minutes. Season with salt and remove from heat.
3) Add cooked yams to the black bean mixture.
4) Wrap tortillas in foil and heat in oven for about 5 minutes.
5) Place warm tortillas on work surface. Spoon filling down center, dividing equally. Top each with 1 packet of the cheese, broken up, and then sprinkle with cilantro. Fold sides of tortillas over filling, forming burritos. Turn each burrito, seam side down, onto plate. Serve.

Tip: Use feta instead of Laughing Cow cheese and add roasted peppers too.
