Salmon with Lemony Sauce

Directions

1. Cut the salmon filet into 4 pieces. Brush with olive oil. Sprinkle with salt and pepper.
2. Brush a non-stick pan with a little olive oil. Heat the pan and add the salmon, (or grill on barbeque.) Cook on one side for only 4 minutes, then place the pan in the oven and cook for 1 minute under the grill to brown.
3. Meanwhile, mix the lemon, parsley and yogurt in a bowl. Set aside in the refrigerator.
4. When you’re read to serve, pour some sauce in the middle of the plates and place part of the salmon on top. Garnish with chopped dill and a few capers.

Cooking Tip: Fresh herbs offer great flavour to foods and help reduce or eliminate the need for added salt.
