Salted Caramel Yogurt and Cheerios Parfait

Ingredients

  • 1/2 cup (125 mL) sugar
  • 2 tbsp (30 mL) water
  • 2 drops fresh lemon juice
  • 1/4 cup (60 mL) whipping cream
  • 2 tbsp (30 mL) butter
  • 1/4 tsp (2 mL) kosher salt
  • 2 cups (500 mL) Original Cheerios
  • 1 cup (250 mL) Yoplait Source Vanilla Yogurt
  • 1 cup (250 mL) fresh raspberries

Directions

1.Place sugar, water, and lemon juice in a medium saucepan and cook over medium/high heat until the sugar has melted, stirring just to combine the ingredients. Note: It is important to use a medium, and not a small, saucepan as the mixture will bubble up once whipping cream is added.

2.Once the sugar has melted, do not stir. The mixture will bubble rapidly, and bubbles will become bigger and slower and the mixture will begin to darken. Gently swirl the pan to distribute the color so the mixture doesn’t burn. When the caramel is a golden amber color, remove it from heat.

3.Gradually whisk in whipping cream a bit at a time, then whisk in the butter and salt. Allow to cool slightly. Note: If the caramel hardens, place it back over medium low heat and whisk until smooth.

4.To assemble the parfaits, spoon ¼ cup of Cheerios into the bottom of the glass. Top with 2 tbsp of the yogurt and drizzle with 1 tsp of salted caramel sauce. Add a layer of raspberries. Repeat the cheerios, yogurt, caramel sauce, raspberries and serve.

Tip: The salted caramel sauce is also excellent on vanilla ice cream
