Honey Sriracha Sheet Pan Chicken with Apples and Cauliflower

Ingredients

  • 2 tbsp (30 mL) honey
  • 2 tbsp (30 mL) melted butter
  • 2 tbsp (30 mL) sriracha hot sauce
  • 1 tbsp (15 mL) soy sauce
  • 1/2 tsp (2 mL) salt
  • 1 lb (500 g) boneless chicken thighs
  • 4 cups (1 L) large cauliflower florets
  • 2 Spartan apples, cut into chunks
  • 1 small red onion, cut into wedges
  • 2 tbsp (30 mL) finely chopped fresh parsley

Directions

  1. Preheat oven to 425?F (220?C). In large bowl, stir together honey, butter, hot sauce, soy sauce and salt. Add chicken, cauliflower, apples and red onion, tossing to coat well; arrange on parchment paper–lined baking sheet.
  2. Bake for about 25 minutes or until internal temperature of chicken reads 165°F (74°C) on instant-read thermometer.
  3. Broil for 1 to 2 minutes or until glaze starts to caramelize. Sprinkle with parsley.

Tip: Substitute maple syrup for honey if desired.
