Sheet Pan Roasted Herb Chicken & Green Beans

Ingredients

  • 4 skinless chicken breasts
  • 1 stick butter, melted
  • 3 tablespoons olive oil
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh oregano, chopped
  • 1 garlic clove, minced
  • 1 teaspoon kosher salt
  • freshly cracked black pepper, to season
  • 1 lb green beans, ends trimmed (or asparagus)
  • 1 package of grape tomatoes, halved or whole, or both for variety

Directions

  1. Preheat oven to 400°F.
  2. In a large bowl, mix butter, olive oil, rosemary, thyme, garlic, salt and pepper.
  3. Toss chicken, green beans and grape tomatoes in butter mixture.
  4. Place the chicken, green beans (or asparagus) and grape tomatoes on a large rimmed baking sheet. Spread in an even layer.
  5. Roast for 25 minutes — until the chicken reaches an internal temperature of 165°F.
  6. Serve immediately and enjoy!
