Smokies with Grilled Corn Salsa

Ingredients

  • 6 Western Family Bavarian Smokies
  • 6 Western Family Crustini Deluxe Sausage Buns
  • Corn Salsa:
  • 2 cobs corn, husks and silk removed
  • 2 tbsp (30 mL) Western Family pure olive oil, divided
  • 1/2 tsp (2 mL) salt, divided
  • 1/4 tsp (1 mL) pepper
  • 3 tbsp (45 mL) red onion, finely chopped
  • 1/2 jalapeno pepper, seeded and chopped (optional)
  • 2 tbsp (30 mL) fresh lime juice
  • 1 tbsp (15 mL) fresh cilantro or parsley, chopped

Directions

 

1)   Prepare Grilled Corn Salsa: Brush corn with half of the olive oil and sprinkle with 1/4 tsp (1 mL) salt and the pepper.

2)   Grill corn over medium-high heat for 12 minutes until tender and lightly charred. Let cool slightly and cut kernels off cob.

3)   Combine corn, remaining oil, remaining salt, red onion, jalapeno (if using), lime juice and cilantro.

4)   Meanwhile, grill sausages according to package directions.

5)   Assemble sausages in buns with Grilled Corn Salsa.

 

Tip: For extra smoky flavor, baste with barbecue sauce in the last few minutes of grilling time.
