Strawberry Clafoutis

Ingredients

  • 1 cup (250 mL) whole milk
  • 3 large eggs
  • 1/2 cup (125 mL) sugar
  • 1 tsp (5 mL) vanilla extract
  • 2 tsp (10 mL) fresh lemon zest, finely grated
  • 2 tbsp (30 mL) melted butter
  • pinch salt
  • 1/2 cup (125 mL) Robin Hood all-purpose flour
  • 2 cups (500 mL) fresh strawberries, washed well and cut in half
  • Whipped Cream:
  • 1/2 cup (125 mL) whipped cream
  • 2 tbsp (30 mL) granulated sugar
  • Optional:
  • Drizzle balsamic vinegar reduction

Directions

1.Preheat the oven at 325°F (160°C).

2.In a large bowl, whisk together milk, eggs, sugar, vanilla, lemon zest and butter until sugar dissolves.  Add salt and flour and whisk until batter is smooth and free of lumps.

3.Pour the batter into an 8-inch cast iron skillet or 4 ceramic ramekins.  Top with fresh strawberries.

4.Bake for 25 to 35 minutes until clafoutis are puffed and golden. Meanwhile, whip 1/2 cup whipping cream with 2 tbsp sugar until soft peaks form.

5.Serve clafoutis right from the oven, drizzled with reduced balsamic and topped with 2 tablespoons of whipped cream.

Tip: Substitute any berries, such as raspberries or blueberries for the strawberries.
