Strawberry Loaf

Ingredients

  • 1 tsp (5 mL) butter (to grease pan)
  • 1 lb. (16 oz.) fresh strawberries, rinsed, hulled and quartered
  • 1 - 3/4 cups (425 mL) Robin Hood all-purpose flour
  • 1 tsp (5 mL) baking soda
  • 1/4 tsp (2 mL) baking powder
  • 1/2 tsp (3 mL) cinnamon
  • 1/4 tsp (2 mL) salt
  • 1/3 cup (75 mL) butter, softened
  • 1 cup (250 mL) sugar
  • 2 large eggs
  • 1/3 cup (75 mL) water
  • Optional:
  • Western Family Cream Cheese for serving

Directions

1.Preheat oven at 350°F (180°C).  Grease an 8-by-4 inch loaf pan.

2.In a small saucepan, mash strawberries and bring them to a simmer.  Cook for 1 minute and set aside.

3.In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon and salt.  Then, in a stand or electric mixer, cream butter, sugar and eggs together until light and fluffy.  Add flour alternately with 1/3 cup of water and fold in strawberries.

4.Scrape batter into prepared loaf pan, smoothing the top.  Bake for 50-60 minutes or until a toothpick comes out clean.

Note: If the loaf is getting too brown after 45 minutes, tent it with foil for the last 15 minutes of baking.

5.Cool in pan for 10 minutes.  Run a knife around the edges to loosen and invert onto a rack to cool completely.  Serve with cream cheese.

Tip: Try mixing in banana to make a strawberry banana bread.
