Thai Chicken Lettuce Wraps

Ingredients

  • 2 tbsp (60 mL) vegetable oil
  • 4 Maple Leaf Prime® Boneless Skinless Chicken Breasts, finely chopped
  • 1/4 tsp (1 mL) each salt and pepper
  • 1/2 cup (125 mL) Knorr® Simply Chicken Broth
  • 1/2 cup (125 mL) diced red pepper
  • 2 green onions, sliced
  • 2 tbsp (30 mL) Western Family Classics Sweet Thai Chili Sauce
  • 2 tbsp (30 mL) lime juice
  • 1 pkg (147 g) Knorr® Sidekicks® Thai Sweet Chili Noodles, prepared according to package directions
  • 20 Boston lettuce leaf cups
  • Garnish:
  • Cilantro leaves
  • Chopped peanuts
  • Lime wedges
  • Sriracha hot sauce

Directions

  1. In a large skillet heat oil over medium-high heat. Season chicken all over with salt and pepper. Sauté for 6 minutes or until browned. Add chicken broth, red pepper, green onions, sweet chili sauce and lime juice; bring to boil. Cook for 7 minutes or until most of the liquid has evaporated and pan is dry. Remove pan from heat and toss with prepared noodles.
  2. For each wrap, place about 1/4 cup (60 mL) chicken mixture on each lettuce cup. Garnish with cilantro and peanuts. Serve with lime wedges and sriracha hot sauce.

Tip:

For a fun family DIY dinner, bring all the components to the table and let everyone assemble and garnish their own wraps.
