Tomato, Mozzarella and Basil Fritters

Ingredients

  • 2 large eggs
  • 1 tbsp (15 mL) tomato paste
  • 4 - 1/2 tbsp (67 mL) all-purpose flour
  • 4 Roma tomatoes, seeded and finely chopped
  • 2 tbsp (30 mL) Western Family Organics fresh basil, chopped
  • 1/4 cup (60 mL) Galbani fresh mozzarella sliced log, chopped
  • 1/4 tsp (2 mL) kosher salt
  • 1/4 tsp (2 mL) ground black pepper
  • 1/2 cup (125 mL) olive oil

Directions

1. In a medium bowl, whisk eggs and tomato paste until well incorporated. Add flour and whisk until there are no lumps.

2. Fold in chopped tomatoes, basil, mozzarella, salt and pepper. The batter consistency should be a little thinner than a pancake batter.

Note: If it is too thin add another teaspoon of flour.

3. In a large skillet, heat olive oil over medium heat. Drop in a tablespoon of batter at a time and fry for about one minute on each side, until golden brown.

4. Remove fritters from oil and blot on paper towel. Season to taste with salt. Serve warm.

Tip: Make a complete meal for lunch or dinner by adding a side green salad.
