Turkey, Cheese and Apple Kabobs

Ingredients

  • 2 Large ciabatta buns, cut into 16 cubes
  • 2 tbsp (30 mL) Western Family extra virgin olive oil
  • 1/2 tsp (3 mL) kosher salt
  • 8 large purple grapes
  • 1 cup (250 mL) cheddar cheese, cut into 8 cubes
  • 4 Slices Maple Leaf Natural Selections Oven Roasted Turkey Breast, cut in half
  • 1/2 apple, cut into 8 wedges
  • 16 spinach leaves
  • 8 6 inch Bamboo Skewers
  • 3 tbsp (45 mL) Western Family mayonnaise
  • 1 tsp (5 mL) Western Family mustard

Directions

1.    Preheat the oven to 400°F (200°C).

2.    To make the croutons, in a large bowl mix the ciabatta cubes with the olive oil and salt.  Place on a baking sheet lined with parchment paper and bake for 5 minutes until toasted.  Cool.

3.    In a small bowl whisk together the mayonnaise and mustard. Set aside.

4.    To assemble the 8 skewers, thread a cube of ciabatta, 1 spinach leaf, a grape, cheese cube, half slice of turkey, apple, 1 spinach leaf, and another cube of ciabatta.

5.    Repeat the previous step for each kabob until all 8 are complete.

6.    Serve 2 kabobs each with mustard dipping sauce.

 

Tip: Make a variety of different kabobs. Switch up the meat to black forest ham, spinach to butter lettuce, or apples for pears.
