Turkey and Cream Cheese Roll

Ingredients

  • 1 - 175g package Maple Leaf Natural Selections oven roasted turkey
  • 1 - 250g package Western Family cream cheese, softened
  • 3 tbsp (75 mL) Western Family roasted red pepper dip
  • 2 ounces (55g) Western Family spinach
  • Ritz Original crackers

Directions

1. On a flat surface, lay out a large piece of plastic wrap. Place cream cheese on top of plastic wrap and cover with another piece of plastic wrap of the same size. Using a rolling pin, roll cream cheese in a rectangle shape about 1/4 inch in thickness.
2. Remove the top layer of plastic wrap. Lay down slices of turkey, overlapping the slices until all cream cheese is covered. Lightly press the meat into the cream cheese to make it stick.
3. Place the plastic wrap back over the top of the cream cheese and turkey and carefully flip so that the cream cheese is back on top. Remove plastic wrap and spread red pepper dip evenly over the cream cheese. Then, layer with spinach.
4. Carefully roll the turkey over the spinach to make a log. Roll as tight as possible, pressing the outer layers tight to hold it all together. Wrap log in plastic wrap, and refrigerate 4 to 6 hours or overnight. The longer it chills the easier it is to slice.
5. Slice to desired thickness and serve on a Ritz cracker.
Tip:  The longer it chills the easier it is to slice. Make it the night before to save time, and substitute in ham or any sliced meat for turkey.
