Turkey, Pomegranate and Orange Salad

Ingredients

  • 2 tbsp (30 mL) extra virgin olive oil
  • 1 shallot, minced
  • 2 tbsp (30 mL) red wine vinegar
  • 1 orange, zested and cut into sections
  • 2 cups (500 mL) leftover turkey
  • 2 tbsp (30 mL) Greek yogurt
  • 1 tsp (5 mL) honey
  • 2 cups (500 mL) Western Family Organics baby spinach
  • 2 cups (500 mL) Western Family Organics baby arugula
  • 1 pomegranate, seeds only
  • 2 tbsp (30 mL) pistachios
  • salt and pepper to taste

Directions

1. In a small frying pan, heat olive oil over medium heat.  Add shallots and fry for 5 minutes.  Pour in vinegar and orange zest and remove from heat.
2. Warm the leftover turkey briefly in the microwave, until it is just heated through.
3. In a small bowl, mix together Greek yogurt with honey.
4. In a large bowl, toss together spinach, arugula, orange sections, pomegranate seeds and pistachios.  Toss with heated turkey and orange dressing.  Drizzle with yogurt sauce and serve.

Tip:  Pack the dressing separately and take this hearty salad along with you for lunch.
