White Chocolate Blueberry Oatmeal Cookies

Ingredients

  • 1 - 1/4 cups Western Family All-Purpose Flour
  • 3/4 cup Western Family Old Fashioned Oats
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 tsp vanilla extract
  • 1 large egg
  • 1/2 cup white chocolate chips
  • 1/2 cup Western Family Frozen Blueberries

Directions

1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.

 2. In a medium bowl, combine flour, oats, cinnamon, baking powder, baking soda and salt.
3. In a stand mixer, using the paddle attachment, beat butter and sugars on medium-high, until light and fluffy.
4. Beat in vanilla extract and egg until combined.
5. Gradually add in the flour mixture to the wet ingredients at low speed. Beat until incorporated.
6. Gently fold in the chocolate chips and frozen blueberries.
7.  Using a tablespoon, scoop out batter and form into a cookie shape and place onto baking sheet.
8. Place into oven and bake for 15 minutes or until golden brown. The center will still be a bit moist.
9. Remove from oven and cool before enjoying.
