Yam Coconut Curry Pasta

Ingredients

  • 2 tbsp (30 mL) canola oil
  • 2 boneless, skinless chicken breasts, sliced
  • 2 medium yams, small cubes
  • 2 cloves garlic, minced
  • 2 tbsp (30 mL) Patak’s Madras curry paste
  • 1 tsp (5 mL) kosher salt
  • 1 can (400 mL) Western Family Premium Coconut Milk
  • 1/2 cup (125 mL) chicken stock
  • 1/2 package (500 g) Western Family Linguini (black box)
  • 2 cups (500 mL) frozen peas, cooked
  • 1 tbsp (15 mL) cilantro, chopped

Directions

1. Heat the canola oil in a large skillet over medium-high heat. Add the chicken breast, season with salt and pepper and cook through, about 4 minutes. Remove from the pan and set aside.
2. Add the yams and cook for 5 minutes. Add the garlic, curry paste and salt and cook for 2 minutes. Add the coconut milk and chicken stock. Simmer for 10 minutes.
3. Cook the linguini and drain and place in a large bowl.
4. Add the cooked peas and the cooked chicken to the sauce. Pour the sauce into the pasta and mix. Portion into 4 bowls and top with cilantro. Serve.

Hint: You can skip the chicken breast to make this a vegan pasta.
