1/4 cup olive oil
1/2 medium onion, finely diced
1 medium tomato, finely diced
3 garlic cloves, minced
1 tbsp ginger, minced
1/2 tbsp tumeric
1/2 tbsp ground coriander
1/2 tbsp cumin
1/2 tbsp black pepper
1/2 tbsp garam masala
1/2 tsp cayenne
1 tbsp salt
2 tbsp tomato paste
1/2 cup water
1 onion, chopped
1 red pepper, chopped
1 green pepper, chopped
1 yellow pepper, chopped
1 lemon, halved

Directions
- In a medium pot, on medium heat add olive oil, diced onion, tomato, garlic and ginger and sauté for 4-5 minutes.
- Stir in the turmeric, coriander, cumin, black pepper, garam masala, cayenne and salt*
- After 2 minutes, mix in tomato paste, water and cubed paneer. Cook on medium heat for 2-3 min, stirring constantly.
- Add in your large chopped onion and peppers and continue to cook for 5 min.
- Remove from heat and squeeze lemon onto dish and stir.
- Top with cilantro and serve on Sundar rice and naan.
*Add more salt and spices to taste
