Ingredients
Western Family 1lb thick-cut bacon, ½ inch thick bacon steak style
¼ cup maple syrup
¼ cup soy sauce
¼ cup brown sugar
½ tsp cayenne pepper, or to taste
450g soft goats cheese, plain or herbed
Handful of chopped walnuts or pecans
1 orange, zested
Salt and pepper
French bread loaf, or premade bread bites or crackers
Olive oil
Parsley, dill or chives for garnish, optional
1 cup cranberries, fresh or frozen
½ shallot, minced
1 garlic clove, minced
¼ cup brown sugar
2 tbsp rice vinegar
½ tsp ground ginger
Dash of salt
¼ tsp cinnamon
1 can (284ml can) Western Family Mandarin Oranges in juice, drained
Directions
  1. Prepare Cranberry Chutney: In a small saucepan, combine 1 cup cranberries, ½ minced shallot, 1 minced garlic clove, ¼ cup brown sugar, 2 tbsp rice vinegar, ½ tsp ground ginger, dash of salt, and ¼ tsp cinnamon. Bring to a simmer and cook, uncovered, for about 15 to 20 minutes until the mixture thickens. Remove from heat and let cool. Store in a small bowl or jar.
  2. Prepare Candied Bacon: Preheat oven to 400°F (200°C). Line a large baking sheet with foil and set a rack over it. Arrange 1 lb (454g) bacon slices on the rack in a single layer. In a small bowl, combine ¼ cup (60ml) maple syrup, ¼ cup (60ml) soy sauce, ¼ cup (50g) brown sugar, and ½ tsp cayenne pepper. Brush the mixture over the bacon, covering each slice on both sides. Bake for 30 to 40 minutes, rotating at the halfway point, until the bacon is brown and shiny. Let the bacon cool on the rack for 5 minutes, then cut into smaller ½ inch pieces.
  3. Prepare Goat Cheese Spread: Remove 450g goat cheese from the fridge to soften. In a bowl, mix softened goat cheese with handful of chopped walnuts or pecans, zest of 1 orange, salt, and pepper.
  4. Assemble the Board: Slice the French bread, drizzle with olive oil, and grill until golden and crispy. Smear the goat cheese mixture onto a wood chopping board, optionally lined with parchment paper for easier clean up. Add dollops of cranberry chutney, candied bacon bits, and sprinkle with a little salt and pepper. Garnish with parsley, dill, or chives if desired. Serve with the toasted French bread, bread bites, or crackers. Enjoy your delightful charcuterie board!
