Ingredients
4 Western Family boneless, skinless, chicken breasts
45 mL Vegetable oil
2-3 Cloves garlic, coarsely chopped
1 Medium zucchini, thinly sliced
1 Small eggplant, thinly sliced
1 Red pepper, sliced
1 Red onion, cut into eighths
75 mL Oil and vinegar dressing
75 mL Crumbled feta cheese
30 mL Italian parsley, coarsely chopped
Salt and pepper to taste
Directions
  1. Broil on high
  2. Heat 2 tbsp ( 30mL) oil in a large non stick skillet over medium heat. Cook the chicken for 5-10 minutes. Meanwhile, toss the vegetables in the remaining oil and place on a large baking sheet. Place on the top rack under the broiler for 15-20 minutes, turning once or twice until the vegetables are lightly charred.
  3. Turn and continue cooking chicken for 3 minutes until lightly browned. Add the garlic and reduce heat to medium low, continuing to cook for about 4-5 more minutes or until the garlic is golden brown and the chicken has reached an internal temperature of 170°F (77°C).
  4. Transfer chicken to a plate: tent with foil to rest for at least 3 minutes.
  5. Transfer vegetables from broiler and toss with dressing.
  6. Transfer the cooked chicken and vegetables onto a large serving dish. Sprinkle with feta cheese, parsley, salt and pepper.
