2 Peaches, ripe, stoned and quartered
4 slices of Prosciutto, torn
1 Mozzarella ball, torn into pieces
2 handfuls of Arugula
2 tbsp Olive oil
1 tbsp Lemon juice
1/2 tsp Maple syrup
2 tbsp Pine nuts, toasted
Directions
  1. Arrange the peaches, prosciutto, mozzarella and rocket on 2 plates.
  2. Make the dressing by whisking together the olive oil, lemon juice and maple syrup. Drizzle the dressing over the salad and scatter over the pine nuts.
