Garlic Butter Steak with Prawns and Asparagus

Garlic Butter Steak with Prawns and Asparagus

Ingredients
2 Striploin steaks
Coarse salt
Black pepper
1 tbsp (15 mL) Olive oil
1 tbsp (15 mL) Butter
1 pound Western Family prawns, peeled
3 Garlic cloves minced
Asparagus spears
1/4 cup (50 mL) Softened butter
3 Garlic cloves minced
1 tsp of Thyme chopped
1 tsp Oregano chopped
Directions
  1. Make the garlic butter compound by mixing butter, garlic and herbs. Set aside.
  2. Prepare asparagus by trimming the ends. Bring a large pot of water to boil.
  3. Pat steaks dry with paper towel and season liberally with salt and pepper. In a large skillet, heat olive oil and butter over high heat.
  4. Add steaks and cook on each side for approx. 3 minutes or until outside is browned. Reduce heat to medium high and continue to cook the steaks to desired doneness. Remove and set aside on a plate and top with butter compound.
  5. Reduce the skillet heat to medium. Add the prawns and garlic and cook for 2-3 minutes until opaque.
  6. As prawns are cooking, add asparagus to the boiling water and cook until bright green and tender (1-3 minutes)

Plate prawns and asparagus together with the steak and enjoy!
