Crinkle Cookies

Ingredients
1 cup all-purpose flour
½ cup cocoa or cacao
¼ tsp salt
1 tsp baking powder
¼ cup unscented coconut oil (melted)
½ granulated sugar (you can use cane)
1 tsp vanilla
2 large eggs
10-12 square caramel candies
1 cup icing sugar or powdered sugar
Directions
- Preheat the oven to 350 C.
- Mix together flour, cocoa powder, salt & baking powder
- In another bowl, melt coconut oil and add sugar, vanilla and eggs. Mix until combined.
- Slowly add dry ingredients to wet (about â…“ c at a time) and mix until a dough is formed
- Form into a ball and saran wrap. Either refrigerate for 2 hours or chill in the freezer for 30-40 minutes.
- Roughly roll the dough into 1 inch balls around 1 caramel candy.
- Pour the powdered sugar into a bowl and roll each cookie until completely covered (you want the whole ball covered… you will use more than you think). Place balls on a baking sheet 2 inches apart.
- Bake for 10 minutes. Let cool on the baking sheet for 3 minutes before transferring them to a wire rack. Let cool until they reach room temperature & enjoy!
