Lemon Dill Salmon Skewers

Ingredients
1 Fresh Salmon
1 Red Onion
4 Lemons
1 Fresh dill, minced
4 tbsp Western Family Extra Virgin Olive Oil
3 tbsp Western Family Butter, melted
Directions
- Cut salmon, onion, and lemon (save one for juicing) into 1” chunks.
- Whisk together lemon juice, minced dill, olive oil, and salt and pepper. Pour this mixture over salmon chunks and allow to marinate for about 30 min.
- Place marinated salmon, onion, and lemon on skewers.
- Brush grill with oil and grill skewers 3-4 min on each side.
- Serve with melted butter and extra fresh chopped dill.
