Ingredients
1 cup pitted dates
1/2 cup cashews (or your favourite nut, or nut butter)
1/2 cup oats
1/3 cup unsweetened coconut flakes
Directions
  1. Pulse pitted dates in a food processor or blender until they’re in small pieces. If dates are not soft, soak them in water for 15 min before processing.
  2. Add cashews and oats, and pulse until roughly mixed.
  3. Using your hands, roll the mixture into 1-inch balls.
  4. Roll each ball into coconut flakes.
  5. To set, place in fridge or freezer for 15 minutes and enjoy!

Tip: Freeze extras for up to a month
