Vegan Vegetable CLIF Bar Fritters

Ingredients
1 CLIF BAR Crunchy Peanut Butter
1 carrot
1 parsnip
1⁄2 zucchini
1 small onion
50g oatmeal
1 tablespoon flaxseed
Some coconut oil for frying
Salt and pepper to taste
1 tablespoon peanut butter (unsweetened)
Directions
  1. Wash the vegetables and if desired, peel.
  2. The carrot, parsnip, zucchini and the CLIF BAR coarsely chop with a sharp grater.
  3. Quarter the onion, into very fine strips, chop, and add to the rest of the vegetables.
  4. Then add the oatmeal, peanut butter, and flaxseeds.
  5. Knead the vegetable mixture with your hands until well mixed.
  6. Let the dough swell for about 10-15 minutes.
  7. Form about 8 patties with wet hands and with some coconut oil in a coated pan at medium heat on both sides for approx. 5 min
  8. Roast meat with fresh sprouts, herbs and quark
  9.  Serve and Enjoy!
