Leftover Holiday Meal
There's always too much food left over after a big holiday feast. Create this leftover turkey corn chowder in just 35 minutes and savour every last bit of that delicious Christmas dinner.

3 cups shredded leftover fully cooked turkey
2 cans of cream style corn, 15 ounces
2 cans sweet yellow whole kernel corn, 15 ounces
4 to 5 cups low sodium chicken broth
2 celery ribs, chopped
2 red bell peppers, diced
3 cups red potatoes, cubed OR golden potatoes
3 cups golden potatoes, cubed OR red potatoes
2 tsp Italian seasoning
1 tsp garlic powder
Salt and pepper to taste
Directions
- In a large stock pot, combine cream style corn, whole kernel corn, broth (start with 4 cups), celery, bell peppers, potatoes, seasoning and garlic powder.
- Cover and simmer over medium heat for 20 to 25 minutes, or until potatoes are fork tender.
- Stir in shredded turkey and season with salt and pepper. Add additional 1 cup of chicken broth if needed. When turkey is heated through, serve and garnish with fresh parsley.
- Enjoy.
