Peppermint Fudge Truffles

16 oreo cookies
1 x 250g package cream cheese
1 tsp peppermint extract
½ cup white chocolate chips
1 tsp coconut oil
2 candy canes, crushed
Directions
- Add oreos into a food processor and blend into crumbs. Remove 1.5 cups of the crumbs and put on a plate.
- Add the cream cheese and peppermint extract into the food processor and mix until well blended.
- Roll the mixture into 1 inch balls and then roll in the oreo crumbs.
- In a microwave safe container, add the white chocolate chips and coconut oil. Microwave for 30 seconds (until melted).
- Drizzle over the balls and sprinkle with crushed candy canes.
Store in an airtight container in the fridge for a week or freezer for 3 months.
