Vegan Vegetable CLIF Bar Fritters

Ingredients
1 CLIF BAR Crunchy Peanut Butter
1 carrot
1 parsnip
1⁄2 zucchini
1 small onion
50g oatmeal
1 tablespoon flaxseed
Some coconut oil for frying
Salt and pepper to taste
1 tablespoon peanut butter (unsweetened)
Directions
- Wash the vegetables and if desired, peel.
- The carrot, parsnip, zucchini and the CLIF BAR coarsely chop with a sharp grater.
- Quarter the onion, into very fine strips, chop, and add to the rest of the vegetables.
- Then add the oatmeal, peanut butter, and flaxseeds.
- Knead the vegetable mixture with your hands until well mixed.
- Let the dough swell for about 10-15 minutes.
- Form about 8 patties with wet hands and with some coconut oil in a coated pan at medium heat on both sides for approx. 5 min
- Roast meat with fresh sprouts, herbs and quark
- Serve and Enjoy!
