


The Best BBQ Chicken Marinade
This BBQ chicken marinade recipe can be whipped up quickly and can be used with different cuts of chicken. You can grill it, bake it or cook it on a griddle pan. Pair it with a salad, grilled vegetables, or a casserole for a delicious meal that the entire family will love. You can also freeze the marinated chicken for up to six months for those busy days.

Approx. 3.5 lbs of boneless, skinless chicken breast or thighs
2 tsp garlic powder
1 tsp freshly ground black pepper
Salt to taste
2 tsp dried rosemary
¾ cup brown sugar
2 tbsp Dijon mustard
2 tbsp lemon juice
¼ cup Worcestershire sauce
¼ cup light soy sauce
½ cup balsamic vinegar
½ cup extra virgin olive oil
Directions
- Whisk all the marinade ingredients together in a large bowl.
- Remove half a cup and keep for later.
- Pour the marinade into a large plastic resealable bag.
- Add the chicken breasts or thighs to the bag.
- Squeeze out the air and seal the bag.
- Gently massage the marinade into the chicken by rubbing the outside of the bag with your hands.
- Refrigerate for a minimum of half an hour or overnight if possible.
- Preheat barbeque to medium high heat and grease grill.
- Remove the chicken from the bag and gently shake off the excess marinade.
- Place the chicken on the grill and cook for about 5 minutes on each side until the chicken is cooked through.
- Use the reserved marinade to baste the chicken on the grill if it starts looking a bit dry.
- Cook until the chicken reaches an internal temperature of 170°F (77°C).
- Cover with foil and let the chicken rest for 5 minutes before serving.
- In the meantime, bring the marinade you had set aside to a boil and allow it to reduce slightly.
- Serve as a sauce to go with the chicken.
Tip: You can also roast the chicken in a preheated oven at 400°F (180°C) for 20 – 22 minutes, basting occasionally until the chicken reaches the desired internal temperature. Alternatively, cook on a hot skillet on the stove top for about 8 – 10 minutes on each side until the chicken is cooked.
