Waffle Ice Cream Cake

Ingredients
1 Western family waffles
1 chocolate cake recipe of choice
2 pints maple walnut ice crea, slightly softened
2 pints coffee ice cream, slightly softened
1/2 cup blueberry jam
2 cups whipped cream
Directions
- Preheat oven to 350f. to make the waffle streusel, take four frozen Western family waffles and cut into smaller pieces (no larger than 1/4-inch squares).
- Spread waffle pieces onto a baking sheet and 3 tbsp of melted butter, 3 tbsp of granulated sugar, and 1/4 tsp of salt. bake for 15 min until crispy.
- Let cool line 9-inch cake pan with parchment paper, allowing parchment to go up the sides of the pan. add an acetate ring inside the pan, this will allow us to build a tall cake cut chocolate cake into two horizontally.
- Place one round of the cake at the bottom of the pan. spread maple walnut ice cream on top of the cake and sprinkle half of the waffle streusel.
- Return cake to freezer for 15 min. dollop blueberry jam and evenly spread coffee ice cream layer. top with second piece of cake. return to freezer to set overnight.
