1. *Make sure that you have every ingredient and step prepped and ready to go before getting the ice cream out of the freezer. Assembly needs to be quick as ice cream melts fast!*
2. Combine crushed Oreos and melted butter together in a bowl until it’s a wet-sand consistency.
3. Line bottom of 9” springform pan with parchment paper. Press about 1/2 to 3/4ths of the cookie mixture into the bottom of the pan, until a nice crust forms.
4. Evenly spread half the Strawberry Matcha Ice Cream on top of the crust.
5. Evenly spread strawberry syrup on top.
6. Sprinkle more cookie mixture on top, reserving just 1/4 cup to garnish the cake later.
7. Spread the remaining ice cream on top.
8. Dispense dollops of whipping cream around the outer edge of the cake, creating a border.
9. Put cake on a plate in the freezer for at least 6 hours or overnight to set.
10. Once cake is frozen and set, then in a small bowl, mix together sliced strawberries and some strawberry syrup. Remove cake from freezer, pour mixture onto the top middle of the cake. Sprinkle remaining cookie crumbs on top. Slice and serve immediately. Enjoy!
