Darrell’s Baked Broccoli Casserole

Ingredients
3 lbs Broccoli
1/4 cup (60 mL) Unsalted butter, melted
1 box of Snack crackers
2 cups (500 mL) Western Family cheddar cheese, shredded
2 cans of Western Family cream of mushroom soup
1/2 cup (125 mL) Western Family Mayonnaise
2 tbsp (30 mL) Milk
Directions
- Preheat the oven at 350 degrees F.
- Butter the casserole dish and set aside.
- Partially steam the broccoli on the stove in a medium pot. Set aside for now.
- Crush the crackers and layer the bottom of the casserole dish lightly with half the Ritz cracker crumbs.
- Place half of the partially steamed broccoli on top of the Ritz cracker crumbs.
- Mix the 2 cans of mushroom soup with mayonnaise and milk.
- Then pour the mixture over the first layer in the casserole dish.
- Grate the cheddar cheese over top.
- Sprinkle with Ritz cracker crumbs.
- Pour the melted butter over the layers.
- Add the remaining steamed broccoli and another layer of Ritz cracker crumbs.
- Pour the remainder of the soup mixture.
- Top with some extra cheddar cheese.
- Bake the casserole for 30-40 minutes.
- Remove from oven and serve.
