Directions

Ingredients:

  • 7 gluten free tortillas (small ones)
  • 1 package (375 g) Western Family uncooked gluten-free breakfast pork sausage meat.
  • 1 tbsp oil for frying
  • 1 cup Western Family Diced Tomatoes
  • 1 cup Western Family Salsa
  • 7 eggs
  • 1 cup grated mozzarella cheese.
  • 1 cup cottage cheese
  • 2 tbsp chopped fresh cilantro
  • 1 ripe avocado
  • 1 tsp lime juice
  • Salt and pepper to taste

 

Directions:

  1. Mash the avocado into a small bowl with lime juice and salt.
  2. Divide the pork sausage into 7 equal portions.
  3. Heat a frying pan and oil on medium heat. Smash 1 portion of sausage on top of a taco, place it meat side down into the pan and cook for about 4 minutes. Flip the taco over and cook it for 1 to 2 minutes more, or until the meat is fully cooked. Remove from heat and set aside.
  4. Wipe the frying pan clean, add about 1 tablespoon of mozzarella, and crack an egg into the centre. Cook over medium heat until the egg whites are set but the yolks are still runny. Season with salt and pepper to taste.
  5. Place the egg on top of the sausage meat, top with a dollop of salsa, guacamole, cottage cheese and cilantro.
  6. Fold the taco in half and enjoy these gluten free, breakfast sausage smash tacos!
