Directions
Ingredients:
- 1 1/2 cups Western Family All-Purpose Flour + 1 Tbsp to toss berries in
- 2 tsp Western Family Baking Powder
- 1/2 teaspoon salt
- 1 cup plain 2% Western Family Greek Yogurt
- 3 Western Family large eggs
- 2 tsp lemon zest, (from 1-2 lemons)
- 1 cup Sugar
- 1/2 tsp Western Family Pure Vanilla Extract
- 1/2 cup Avocado Oil
- 1 1/2 cups mix of blueberries and raspberries, fresh
- 1-2 cups Powdered Sugar
- 2 Tbsp Lemon Juice, fresh squeezed (from 1-2 lemons)
Directions:
- Preheat oven to 350F. Fully line a 9x5 inch loaf pan with parchment paper, set aside.
- In a medium bowl, whisk together 1 1/2 cups flour, baking powder, and salt.
- In a large bowl, whisk together greek yogurt, eggs, lemon zest, sugar, vanilla, and oil. Then slowly whisk dry ingredients into the wet ingredients.
- Toss berries in a small bowl with 1 Tbsp of flour, until evenly covered. Then with a spatula, fold berries gently into batter until just combined. Pour batter into prepared loaf pan and bake for 45 min at 350F. If a toothpick comes out clean with no batter on it, remove from oven. If not then bake for 12 min at 325F and test with toothpick again.
- When loaf is done baking, allow to cool in the pan for 5-10 min, then remove from loaf pan by lifting it with the parchment paper and place onto a rack over a baking sheet. Allow to cool completely.
- To make glaze: in a small bowl, whisk lemon juice and powdered sugar together. If too runny, add more powdered sugar. If too thick, add more lemon juice. Do this until you reach desired consistency. Drizzle glaze on top of the cooled loaf, and enjoy!
