1 cup pitted dates
1/2 cup cashews (or your favourite nut, or nut butter)
1/2 cup oats
1/3 cup unsweetened coconut flakes
Directions
- Pulse pitted dates in a food processor or blender until they’re in small pieces. If dates are not soft, soak them in water for 15 min before processing.
- Add cashews and oats, and pulse until roughly mixed.
- Using your hands, roll the mixture into 1-inch balls.
- Roll each ball into coconut flakes.
- To set, place in fridge or freezer for 15 minutes and enjoy!
Tip: Freeze extras for up to a month
