Vegan Cashew Spinach Dip

Ingredients
½ onion
1 cup vegetable broth
1 cup cashews
1 cup spinach
½ a lemon
5 canned artichokes
2 tbsp vegan mayo
1 tsp dried basil or oregano
salt & pepper to taste
Directions
  1. Soak the cashews. Place your cup of cashews in hot water for at least 30 minutes, but preferably the longer the better. This can be done in advance, maybe before you head out the door for a training session.
  2. Sauté onion in vegetable broth. Chop up your onion, place in a saucepan with vegetable broth and sauté over medium heat until liquid has been absorbed. Be careful not to fry your onions, they should be golden.
  3. Place ingredients in a food processor or blender. Add soaked cashews, sauteed onions, artichokes, mayo, basil/oregano and lemon juice into your high-speed blender of choice. Sprinkle some salt and pepper to taste.
  4. Blend! This part should be relatively self-explanatory… Blend until you have reached your desired creamy consistency.
  5. Dip. Pick up your favourite veggie or cracker and dip away.
