Apple Stuffed Squash

Ingredients
2 Acorn Squash
500 mL Western Family unsweetened apple sauce
125 mL Raisins
60 mL Western Family liquid honey
60 mL Chopped walnuts
15 mL Western Family butter
15 mL Grated lemon zest
10 mL Fresh lemon juice
2 mL Cinnamon
Directions
- Preheat oven to 375°
- Cut squash in half and remove seeds. Combine applesauce, raisins, honey and walnuts. Fill squash with mixture. Dot each squash with butter. Sprinkle with lemon zest, juice and cinnamon.
- Place filled squash in shallow baking pan. Pour in hot water to 1/4 inch (1 cm) depth. Bake, covered, in preheated oven for 30 minutes. Uncover and bake for another 20 minutes or until squash is tender.
Cooking tip
Squash makes a great container for rice, meats and even fruit.
