Honey Hoisin Sweet Potatoes

Ingredients
1/4 cup (60 ml) Hoisin Sauce
2 tbsp (30 ml) Honey
1 tbsp (15 ml) Olive oil
1/2 tsp (2 ml) Salt
4 small Sweet potatoes, halved lengthwise
2 tbsp (30 ml) Lime juice
1/3 cup (75 ml) Chopped cashews
1 Green onion, chopped
Lime wedges
Directions
    1. In a small bowl stir together hoisin, honey, olive oil, and salt.
    2. Halve sweet potatoes. Brush the cut sides with 2 tablespoons of the hoisin mixture.
    3. Place potatoes, cut sides down, in baking pan lined with foil and coated with nonstick cooking spray.
    4. Roast at 425°F for 25 to 30 minutes or until tender.
    5. Add lime juice to remaining hoisin mixture; spoon over cooked sweet potatoes.
    6. Top with cashews and green onion. Serve with lime wedges.
