Toaster Pancakes

1 cup whole grain flour
1 tbsp sugar
1 tbsp baking powder
salt (light sprinkle)
1/2 cup Only Goodness rolled oats
1/4 cup vegetable oil
1 egg
1 1/2 cup milk
1 apple (sliced and microwaved for 2 minutes)
handful of raisins
dollop Greek yogurt
dash cinnamon
drizzle of honey
Directions
- In a large bowl, mix all dry ingredients together.
- In a medium bowl, mix all wet ingredients together and add to dry bowl. Mix until lumpy.
- Fold in raisins and apples.
- Cook both sides on pan for a couple minutes until golden brown.
- Top with a dollop of Greek yogurt and cinnamon, and a drizzle of honey.
Tip: Once pancakes have cooled, layer with parchment paper and freeze in a bag or container. In the morning, simply take out 1-2 pancakes, and pop into the toaster for a quick breakfast.
