Ingredients
1 tbsp (15 mL) Western Family olive oil, divided
1 lb. (500 g) Skinless, boneless chicken breast sliced or cut into bite sized pieces
15 Mushrooms, sliced
1 Large Red bell pepper, cut into strips
2 Medium Apples. Cored and sliced
3/4 cup (175 mL) Apple juice
1/4 tsp (2 mL) Cinnamon
1/2 tbsp (8 mL) Fresh ginger root, grated
1/4-1/2 tsp (2-3 mL) Crushed red pepper
1 1/2 tbsp (23 mL) Cornstarch
Directions
- Over medium-high heat in a large non-stick skillet or wok, heat half the oil. Add chicken and cook until the juices run clear ad chicken is no longer pink on the inside. Set aside.
- Add other half of oil to wok and heat. Add mushrooms and cook until tender, about 3-5 minutes. Add peppers and apples and cook only until tender-crisp, about 2-3 minutes.
- Meanwhile, whisk together apple juice, chicken broth, cinnamon, ginger, chili pepper and corn starch. Mix well.
- Add chicken and mushroom and apple mixture. Pour whisked sauce into wok and stir constantly until mixture comes to a boil and thickens to desired consistency. Serve over rice or noodles.
Health Tip
An apple a day may help control cholesterol and lower blood sugar levels. Apples are high in pectin fibres, which attack cholesterol, slow the release of sugar into the blood stream and help prevent constipation. Apples also enhance dental health
