


Blackberry Friands
What is a Friands? It’s an almond flour and egg white based baked good, baked in a specific friands pan, originally from Australia/New Zealand, that usually has berries and flavouring such as lemon zest, orange zest or vanilla. They are similar to a muffin, but the unique combination of almond flour and egg whites gives them a delicious flavour and texture.
In this recipe, the egg whites are lightly beaten just until they are frothy – it is not meringue and that’s a mistake that sometimes bakers make! Lightly frothing the egg whites incorporates air which is the main source of leavening in this recipe.

Ingredients
2 tbsp (30mL) Sugar in the Raw® Natural Turbinado Sugar
5 egg whites
1 cup (250mL) Robin Hood® Almond Flour
1 ½ cups (375mL) icing sugar, plus additional for garnish
¾ cup (175mL) Robin Hood Original All Purpose Flour or Robin Hood Gluten Free All Purpose Flour Blend
1/3 cup (125mL) melted butter
Grated orange zest, optional
36 fresh blackberries or raspberries
Directions
- Preheat oven to 350°C (180°F). Grease Friands or muffin pans and sprinkle bottom and sides with turbinado sugar.
- Lightly whisk egg whites in a medium bowl. Add remaining ingredients (except blackberries) and stir to combine. Place in prepared pans.
- Top each with 2-3 blackberries and press down slightly.
- Bake 30-35 minutes, or until golden and tops appear dry. Let cool 5 minutes in pan and then gently remove to wire cooling rack.
