Ingredients
3lb butternut squash, peeled and chopped
2 tbsps olive oil, plus additional for baking dish
1 ½ cups fresh cranberries
2 tbsp honey
¼ cup crumbled feta
Juice and zest of 1 large orange
2 tbsp fresh herbs, thyme or rosemary are a good choice
3 medium apples, peeled and chopped
Parsley, for garnish
Salt
Pepper
Pinch of cinnamon
Cloves
Nutmeg
Directions
  1. Preheat oven to 400 degrees F. Grease a deep 9x13 baking dish with olive oil.
  2. In a large mixing bowl, whisk together the orange juice, zest, honey, olive oil, herbs, and spices.
  3. Dice your squash and apples, try to keep them fairly equal in size so your apples don’t cook faster then your squash.
  4. Add the cubed butternut squash and apples to your bowl with the dressing. Toss to coat.
  5. Spread the squash and apples evenly in your baking dish and sprinkle with salt and pepper to taste.
  6. Bake for 20 minutes. At the 20-minute mark, pull out of oven and add your fresh cranberries to the roasting pan, mix together with the squash and apples.
  7. Return to oven and bake for 10 to 15 minutes or until the cranberries have started to soften and burst.
  8. Remove from oven and sprinkle with feta.
  9. Garnish with fresh parsley.
