Butternut Squash, Cranberry and Apple Bake

Ingredients
3lb butternut squash, peeled and chopped
2 tbsps olive oil, plus additional for baking dish
1 ½ cups fresh cranberries
2 tbsp honey
¼ cup crumbled feta
Juice and zest of 1 large orange
2 tbsp fresh herbs, thyme or rosemary are a good choice
3 medium apples, peeled and chopped
Parsley, for garnish
Salt
Pepper
Pinch of cinnamon
Cloves
Nutmeg
Directions
- Preheat oven to 400 degrees F. Grease a deep 9x13 baking dish with olive oil.
- In a large mixing bowl, whisk together the orange juice, zest, honey, olive oil, herbs, and spices.
- Dice your squash and apples, try to keep them fairly equal in size so your apples don’t cook faster then your squash.
- Add the cubed butternut squash and apples to your bowl with the dressing. Toss to coat.
- Spread the squash and apples evenly in your baking dish and sprinkle with salt and pepper to taste.
- Bake for 20 minutes. At the 20-minute mark, pull out of oven and add your fresh cranberries to the roasting pan, mix together with the squash and apples.
- Return to oven and bake for 10 to 15 minutes or until the cranberries have started to soften and burst.
- Remove from oven and sprinkle with feta.
- Garnish with fresh parsley.
