


Ground Beef Sweet Potato Bowls with Peach & Tomato Salsa


Ingredients
- 2 small sweet potatoes, diced
- 2 tbsp. olive oil
- 1 lb ground beef
- 1 (24g) taco seasoning packet
- 1 cup plain Greek yogurt, divided into 4 servings
- Tomato & peach salsa
- 2 ripe peaches, diced
- 1 cup grape tomatoes, quartered
- 1 Jalapeno, seeded & diced
- Cilantro, torn to taste
- ¼ small red onion, diced
- 1 lime, juiced
- Salt & black pepper to taste
- 2 avocadoes, diced
Directions

Peel and dice sweet potatoes into 1-inch cubes. Add to a bowl and season with olive oil, salt and black pepper. Using clean hands, toss to coat evenly. Add seasoned sweet potatoes to a large sheet pan, and bake on 400 for 40 minutes or until fork tender

Prepare the peach and tomato salsa by adding peach, tomato, jalapeno, cilantro and the juice of 1 lime to a bowl. Season with salt and black pepper to taste. Mix and set aside for later

To a heated fry pan, add ground beef. Once brown, drain excess fat and add taco seasoning, mix to combine. Add a few tablespoons of water to prevent sticking and a dried-out texture. When done, remove from heat

Build bowls by layering sweet potato followed by seasoned ground beef, Greek yogurt, peach & tomato salsa, avocado, and fresh cilantro. Mix and enjoy!
