


Short Rib Tacos with Mango Salsa


Ingredients
• Western Family Mexican Tortillas
• 1 lb WF Western Canadian Boneless Beef Short Rib Roast, thinly sliced
• 2 tbsp Western Family Extra Virgin Olive Oil
• 1 packet Western Family Taco Seasoning Mix
• 1 Ataulfo Mango, diced
• 1/2 Red Bell Pepper, diced
• 1/4 cup Fresh Cilantro, chopped
• 1 Shallot, finely chopped
• 1 Jalapeno, finely diced
• 2 tbsp Lemon juice, freshly squeezed
• WF Avocrema
• WF Cilantro Lime Crema Sauce
• Salt to taste

Preheat a grill or large pan over high heat. Pat the thinly sliced short rib dry and toss with the Western Family Extra Virgin Olive Oil and Taco Seasoning Mix until evenly coated.

Cook the beef for 4 to 5 minutes total, stirring occasionally, until nicely browned and cooked through. Remove from heat and set aside.

In a bowl combine the mango, Red Bell Pepper, Cilantro, Shallot, Jalapeno and Lemon juice. Mix well until fully combined.

Warm the tortillas and fill with the cooked short rib. Top with mango salsa, Avocrema and Cilantro Lime Crema Sauce.
